Preheat the oven to 180 degrees Celsius. Hydrate the couscous in 2 cups of hot water, cover and leave for 10 minutes.

A quick recipe, perfect to be included in the menu for romantic dinner, because the preparation does not take more than 20 minutes and in the hour you have to spend it cold, you can take care of other recipes or decorations and make-up . Inspiration:

& # 8211 120 gr of Feta cheese (do not replace with cream cheese but rather with stronger telemea)
& # 8211 ½ teaspoon Worcester sauce
& # 8211 2 teaspoons white onion all very fine
& # 8211 ¼ teaspoon black pepper
& # 8211 ½ link freshly chopped parsley

Mix the two types of cheese, sauce, onion and pepper until we have a homogeneous paste. Divide the composition into 2 equal parts, cool one for an hour and use the other for the recipe for sandwich rolls with Arabic bread.

After an hour or even more (you can prepare the composition the day before), form cheese balls, the size of a walnut and pass them through chopped parsley. Our feta cheese truffles are ready: super good and super fast!

  • 6 large tomatoes, well cooked
  • 1 large red onion
  • 1 large greenhouse cucumber
  • 2 green bell peppers
  • 500 g feta cheese
  • 200 g olives Kalamata
  • 100 ml extra virgin olive oil

Method of preparation:

Wash the tomatoes, cut them in half vertically and remove the top. Washed bell pepper, cut it in half vertically. Remove the stalk and seeds, then cut it into juliennes. Washed chestnuts peeled, or just cut it into slices of about 5mm.

Peel an onion, wash it and cut it into strips. Put all this in a larger bowl or you can divide the vegetable mixture into 4 smaller bowls. Add the olives, olive oil, cheese cut into 4 slices for the 4 portions, oregano and season with salt and pepper. Serve the salad cold.

Greek pumpkin meatballs with tzatziki

Today I held a cooking workshop for some colleagues and I left there full of positive energy. I remembered how much I like to talk to people about food, about lesser known ingredients, about the benefits of natural products and in general about cooking. I realized that lately we have gathered a lot of information about healthy and diversified nutrition, about new products that we can introduce in our diet and even a few things about nutrition. I am very happy to be able to pass on these things and help other people to discover new things. We prepared and ate guacamole, sunflower seed pate, raw brownie and strawberry ice tea together. The bowls were emptied and people were delighted that you can prepare healthy and tasty food in a short time.
That's what I'm trying to do on the blog and I missed writing something else. So I told myself that today I must bring you a new recipe.
Last summer I fell in love with Greek food and since then I have been trying various recipes, including the well-known pumpkin meatballs. I didn't want to fry them, but I baked them and that's how I got a healthier version.

For meatballs you need:
3 medium zucchini
1 or
100 gr wholemeal flour
150 gr feta
3-4 tablespoons of breadcrumbs
a green onion
a bunch of dill
2-3 sprigs of mint

The traditional Greek girl has the texture of a telemea and has nothing to do with that super processed cream that is found in those vacuum boxes. You can buy it from Olympus supermarkets or from Greek stores. I found one near Matache Square, on Atelierului Street where the prices are very good. Also there you will find halloumi and authentic Greek yogurt.

The pumpkins are washed and passed through the grater with large holes. Then put it in a strainer, sprinkle with salt and let it drain for 30 minutes. Then squeeze by hand and put in a bowl. Add finely chopped feta, mint, dill and finely chopped onion. Mix well and then add the beaten egg which is homogenized in the composition. Add flour, then sour cream, salt and pepper and knead.
Take two tablespoons of the composition and form balls the size of a golf ball and place them on a tray covered with baking paper. If it starts to stick to your palms, rinse your hands and continue with your palms slightly damp.
After finishing the composition, with a spoon or palm, flatten the balls to a thickness of about 1 cm. Put the tray in the preheated oven at 170-180 degrees.
After 5-10 minutes, turn the meatballs over and let them brown for another 5-10 minutes. To check if they are ready, take one out, let it cool and taste it.
If you want, you can fry them in olive oil for 4-5 minutes on each side.

For tzatziki, you will need:

300 gr Greek yogurt
3 medium cucumbers
2 cloves of garlic
2 tablespoons olive oil
a tablespoon of lemon juice

The cucumbers are also given through the large grater and drain well. Mix with yogurt, finely chopped garlic, oil and lemon juice.

In order for these vegetable salads to be much more appetizing (not only for taste), it is good and aesthetic to use wide and tall glass dishes.

In a glass bowl we will put the chopped vegetables in a certain order (without a rule).

We will prepare the vegetables, washing them and peeling them (for the vegetables that require this), then we add them to the bowl.

We cut the cheryy tomatoes in half, thinly sliced ​​cucumbers (if small), half slices (if large), thinly sliced ​​bell peppers and julienned and rubbed onions with a little salt (to be sweeter) and squeezed.

We put the vegetables stuck in the bowl, the Feta cheese cut into small cubes and the round black olives.

In a small bowl we will make the dressing for the salad as follows: we put the olive oil, sesame, balsamic vinegar, honey, salt and pepper, mixing everything with a whisk, until a sauce is obtained.

Add the sauce over the vegetables in the bowl, mixing them with 2 large tablespoons or special Teflon forks for mixing the vegetables.

Cornmeal with cheese

1. For the polenta, boil the water and salt and when the water boils, sprinkle the corn, stirring constantly. Reduce heat and simmer for 20 minutes. Pour the polenta on a wooden support and let it cool.

2. Meanwhile, cut the telemeau into cubes, mix the breadcrumbs well with the flour and beat the eggs.

3. Then, with a wet hand, take small quantities of the almost chilled polenta, shape it between the palms and put a cube of telemea. Round and pass through the mixture of breadcrumbs and flour.

4. After all the meatballs have formed, fry them in a hot oil bath and remove them with a frothing pan on paper napkins.

We prepare the crtofii. We clean them, cut them into cubes and place them in an oven tray. Separately mix the garlic powder with the paprika, salt, pepper and olive oil. Pour the mixture over the potatoes, massage them 2-3 times and put the tray in the oven until the potatoes are soft.

For dressing, simply mix all the ingredients in a bowl. We put the water at the end depending on the consistency we want.

Put a salad on a plate (I used a salad mix), place the chilled potatoes, julienned onions and crushed feta cheese. Pour the dressing, sprinkle some sesame seeds and good appetite!
