There cucumber and yogurt cream it is a very special recipe. In reality it is one velvety, obviously in the summer version! If you want, you can also serve it hot, but I think it gives its best when cold: you can therefore prepare it in advance, let it cool, keep it in the fridge ... and returning from the sea you will know that you already have lunch ready, light, tasty and refreshing : definitely perfect for the summer! You can accompany it with some croutons or even eat it like this, simple, creamy and delicious!
Girls I don't know about you, but in this period I would only eat cold dishes, especially at lunch when it is very hot outside.

How to make cucumber and yogurt cream
Peel the cucumbers (remember to keep a few slices aside for decoration) and the potatoes, then cut everything into cubes.
Thinly slice the onion and brown it with a little oil in a saucepan.
Add the vegetables, cover with the broth and simmer for 20-30 minutes (check the cooking of the potatoes with the prongs of a fork).
Blend with the blender, then add the Greek yogurt and season with salt.
If you prefer a thicker consistency, put it back on low heat and let it thicken.
The cucumber and yogurt cream is ready, you can serve it hot, lukewarm or cold, depending on your taste.
