The pumpkin gateau it's a really delicious recipe! Honestly, I don't know why a pumpkin lover like me didn't think of preparing this alternative before, a little lighter than the classic and much better known potato pie. Being a flan, it is ideal for the cold season and being made with pumpkin, then, it is perfect for autumn. You can customize the filling as you like, although I personally find the pumpkin-speck combination really delicious! How to make pumpkin gateau
First rinse the potatoes under water, then put them to boil and cook for 30-40 minutes.
Once well cooked, drain and mash them with a potato masher and let cool.
while the potatoes are cooking, clean the pumpkin (removing seeds and peel) and cut it into cubes.
Then steam it for about 10-15 minutes, until it is very soft, then blend it and let it cool.
Combine potatoes and pumpkin in a large bowl, add egg, parmesan and salt and mix.
Then add the cheese and diced speck and mix.
Transfer the dough to the greased mold sprinkled with breadcrumbs, level the surface well, then cover with breadcrumbs and add flakes of butter.
Bake in a preheated convection oven at 180 ° C and cook for about 40 minutes (if you want, you can turn on the grill for the last 5 minutes of cooking).
Remove the pumpkin gateau from the oven and let it rest for at least 20 minutes before serving!
