Last night I had the pizza party at my house and I introduced the recipe for this new pizza. The recipe for pizza stuffed with eggplant and caciocavallo I took it from one of my volumes of recipes of Italian cuisine and it entered by force in my personal recipe book: P
How to make pizza filled with eggplant
Prepare the pizza dough.
Wash the aubergines and cut them into cubes, then fry them and drain them on absorbent kitchen paper.
Wash the cherry tomatoes and cut them into cubes, season with salt, pepper, 2 tablespoons of oil and 1 handful of basil.
Cut the cheese into cubes. Put it all together.
Divide the pizza dough into 2 parts and roll out 2 discs (1 larger and 1 smaller) with a rolling pin.
Grease a pan with oil and line with the largest pizza disc, spread the filling over it and sprinkle it with grated pecorino.
Cover with the remaining disc, seal the edges and brush the surface of the pizza stuffed with aubergines with oil.
Bake the pizza stuffed with aubergines at 180 ° C and bake for 30-40 minutes in a preheated oven.
Cut the pizza into slices and serve.
